How To Brew: V60 Drip Filter

Brewing coffee with a V60 is known for producing a clean, nuanced cup with rich flavours. Follow this step-by-step guide to master the V60 pour-over method.

(V60 comes in several sizes the below recipe is based on an 02 dripper)

What You’ll Need:
  • V60 Dripper
  • V60 Filter Paper
  • Noni's Coffee Beans (or ground)
  • Grinder (if using whole beans)
  • Gooseneck Kettle
  • Scale
  • Timer
  • Mug or Carafe
  • Hot Water (94° or just off the boil)

Brew Ratio:

  • Coffee-to-water ratio: 1:15 to 1:17 (1g of coffee to 15-17g of water).
  • Standard dose V60 02: 20g of coffee to 300g of water.
  • Adjust based on taste preference.

 1. Grind the Coffee

Grind your beans to a medium-fine consistency, similar to table salt. For this brew, we recommend 20g of coffee.

2. Boil Water

Bring filtered water to a boil, then let it cool slightly (around 94 ͦ c). This ensures optimal extraction without burning the coffee. This can also be achieved by boiling the kettle and removing the lid for 30 seconds.

3. Rinse the Filter

Place the V60 dripper on top of your mug or carafe and insert the filter paper. Pour hot water over the filter to rinse away any papery taste and preheat the dripper. Discard the rinse water.

4. Add Coffee Grounds

Place your V60 and carafe on a scale and tare it to zero. Add 20g of ground coffee to the filter and gently shake the dripper to level the coffee bed.

5. Bloom (30 seconds)

Start your timer. Pour 40g of water (twice the weight of the coffee) over the grounds in a slow, circular motion. This is called the bloom. Let it sit for about 30 seconds to allow the coffee to "bloom" and release trapped gases.

6. First Pour (Up to 1:00)

After the bloom, begin your first main pour. Pour in slow, controlled circles, starting in the centre and spiraling outward, until you reach 150g of water. Aim to finish this pour by the 1-minute mark.

7. Second Pour (Up to 2:00)

At around 1:30, begin the second pour, continuing the circular motion until you reach 300g of total water. Try to finish pouring by the 2:00 mark.

8. Let It Drain

Allow the water to drain completely through the coffee bed. This should take about 2:30-3:00 minutes in total. If it’s draining too quickly, the grind might be too coarse; too slowly, and the grind may be too fine.

9. Remove and Serve

Once the water has fully passed through, remove the dripper and discard the used filter and grounds. Swirl your coffee in the carafe or mug to mix the layers, and enjoy!

Tips for Better V60 Brewing:

  • Adjust grind size: If your brew tastes too bitter, try a coarser grind (faster flow). If it tastes weak or sour, use a finer grind (slower flow)

  • Water pouring technique: Pour in small circles, avoiding the edges of the filter. This helps ensure even extraction.

  • Fresh coffee: Use freshly roasted coffee for the best flavour, and grind it right before brewing to maximize freshness.
